Citrus Herb Grouper or Lionfish Bowls

Why it works: lean protein, lots of flavor, and light enough for hot weather.

Ingredients

  • 1 to 1½ lbs grouper or lionfish fillets
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

For the bowl

  • 2 cups cooked cauliflower rice or jasmine rice
  • 1 avocado, sliced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • 2 cups shredded romaine or mixed greens
  • 2 tbsp chopped cilantro or parsley

Light dressing

  • ¼ cup plain Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • Pinch of salt
  • Splash of water to thin

Directions

  1. Marinate the fish
    Mix olive oil, lime juice, lemon juice, garlic, paprika, oregano, salt, and pepper. Coat the fish and let sit for 15–20 minutes.
  2. Cook the fish
    Bake at 400°F for about 10–12 minutes, or until flaky.
    You can also grill or pan-sear it for 3–4 minutes per side depending on thickness.
  3. Make the dressing
    Stir together Greek yogurt, lime juice, olive oil, salt, and a little water until smooth.
  4. Build the bowls
    Add greens and cauliflower rice or a small scoop of jasmine rice, then top with cucumber, tomatoes, red onion, avocado, and the cooked fish.
  5. Finish
    Drizzle with the dressing and sprinkle with cilantro or parsley.

Optional add-ons

  • Fresh mango salsa for a tropical version
  • Jalapeño slices for heat
  • Pumpkin seeds for crunch
